Paleo Poppyseed/Blueberry muffins
- 1/2 cup plus 2 Tablespoons coconut flour
- 4 eggs
- 2 egg whites
- 1/2 cup baking stevia (or similar natural sweetener)
- 1 cup coconut milk (you can use almond milk, but i wont guarantee the right consistency with the batter)
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking soda
- and then you can add whatever mix-ins you choose. i chose blueberries and poppy seeds
. (i also added a splash of lemon)
Add all of your ingredients to a bowl. literally just stir them all up, add batter to lined cupcake sheets and bake for 22 minutes at 350 degrees. or until tops are firm and cake-like. let cool and devour. :)

Deleteyou will have to share the page with your sister. the best part is, they are easy and COMPLETELY fool proof! i struggle making a lot of gluten free recipes because there is so much room for error, but these are a piece of cake. :) i hope your sister likes them!
