Paleo Muffins

i know its bound to be a good day when i make something paleo and the husband says: these were a very tasty little treat. as if him eating half a dozen mini muffins didn't signify he liked them, the warm compliment boosted me up for the day. :)  i love carbs. breads, pastries, muffins, cakes etc. you name it, i want it! however...after a rough bout of thinking i needed to test my gluten intolerance out about a two weeks ago, i am convinced i can no longer eat them. so, a few days ago, a friend and i got together and made some paleo cupcakes...i thought they were good considering i normally have a hard time with paleo desserts, but i decided to play around with the recipe a bit more and make it more of a muffin rather than a cupcake. the recipe has only 26 calories per muffin and tasted like a dream. :)

Paleo Poppyseed/Blueberry muffins
  • 1/2 cup plus 2 Tablespoons coconut flour
  • 4 eggs
  • 2 egg whites
  • 1/2 cup baking stevia (or similar natural sweetener)
  • 1 cup coconut milk (you can use almond milk, but i wont guarantee the right consistency with the batter)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
    • and then you can add whatever mix-ins you choose. i chose blueberries and poppy seeds
      . (i also added a splash of lemon)

     Add all of your ingredients to a bowl. literally just stir them all up, add batter to lined cupcake sheets and bake for 22 minutes at 350 degrees. or until tops are firm and cake-like. let cool and devour. :)

      you will have to share the page with your sister. the best part is, they are easy and COMPLETELY fool proof! i struggle making a lot of gluten free recipes because there is so much room for error, but these are a piece of cake. :) i hope your sister likes them!
