Gluten free gravy for colorful hawaiian haystacks

I've never had such a request for a recipe before. But I was so happy because this is such a tasty meal. Hawaiian haystacks are a staple around here and I crave them all the time. Downside?? They call for gravy and gravy is far from gluten free; not to mention a cup of chicken gravy has 188 calories and 13 grams of fat. :/ my recipe has 15 calories a cup and only .05 grams of fat. Take that! ;) 

For my favorite Hawaiian haystacks you'll need:

•Two free range chicken breast, chopped. (Free range is my personal preference. It won't make a difference in the recipe if you use "normal" chicken.)
•16 oz free range chicken broth. (Again, preference. I also use organic and low sodium.if you want a vegetarian gravy, just use vegetable broth.)
•bobs red mill gluten free cornstarch
•organic celery, diced
•organic tomatoes, diced
•organic green onions, chopped
•low sodium olives, sliced
•pineapple chunks (in its own juices)
•mandarin oranges (rinsed of any syrup)
•rice, cooked

Amounts will vary depending on how many people you're feeding. 

After you've cooked your chicken and diced your fruits and vegetables, set them aside and start on your gravy. 
While the broth is still at room temperature, you're going to mix it with about two tablespoons of the gluten free cornstarch. Mix with a whisk until broth is cloudy and corn starch is thoroughly dissolved. Put pan on high heat until mixture comes to a boil. STIR CONSTANTLY. Reduce heat, stir for another 2-3 minutes and add to chicken. 

Once everything is diced chopped, cut, sliced, opened etc. grab a bowl and a spoon. Layer: rice, chicken/gravy, veggies, fruits. And devour. 

Other optional toppings are: cheese (try for a raw milk cheese) , crunchy chow mein noodles (not gluten free!), or coconut shreds. 

 It's such an easy meal and has so many essential vitamins and nutrients! I hope you enjoy!
