Gluten free, grain free healthified lunchables

I have a new favorite lunch. I channelled my inner child and really wanted lunchables. However, I've never tried a gluten free cracker that I like so that is the improvisation...and a tasty improvisation, too, I may add! 

Cucumber. :) 

It may seem strange, but think of how tasty a cucumber is, add some lunch meat and hormone free cheese in between that and you have a colorful, healthy combination! 

If you have left over cucumbers, just use sea salt and pepper to spice them up and enjoy! :)
