Broccoli and chicken quinoa casserole

I First off, if you're looking for a fat free meal, head back to the nineties. :) that rage SHOULD be well over. it's been proven that healthy fats aren't what make us fat. It's the sugar and carbs that feed the fat cells in the body causing us to plump up. This meal is not plain spinach and carrot sticks but is packed full of healthy fats from hormone free, grass fed, organic dairy, protien from organic quinoa and free range chicken, antibiotics from garlic and vitamins and minerals from vegetables. It's nutrient packed and delicious to boot! Let's get started. 

You'll need: 

1 lb ground chicken 
1 bag frozen broccoli 
1 c quinoa prepared 
1 16oz container cottage cheese 
1 T garlic 
1 1/3 C Colby jack cheese 

Preheat oven to 350. Cook chicken until browned through. Set aside. In chicken juices sauté garlic until fragrant. Add frozen broccoli and cover on low heat; stirring occasionally. Prepare quinoa according to package directions.
While broccoli is cooking, prepare an ungreased casserole dish as follows:

8 oz cottage cheese sprinkled with pepper.  
Next add cooked chicken 
Then, add cooked broccoli
Another layer of cottage cheese
Fat layer of cooked quinoa
 Top with cheese
 Bake at 350 until cheese is bubbly (roughly 17 minutes) 
Look at how pretty it is
Serve warm!
